SUPERFOOD VANILLA BUNS
(For the kids who refuse eggs… but never refuse a choc chip bun 😅)

I created these because one of my boys simply won’t eat eggs, and eggs are one of the richest natural sources of choline.

Choline is such an underrated nutrient, but it’s absolutely vital for growing children…

brain development
memory + learning
mood + nervous system support
healthy muscles and cell membranes

So if your child isn’t an “egg child” either… this is such an easy, delicious way to sneak them in.

And it’s also why we include choline in the Mighty Kids Multi too, because these foundational nutrients matter so much for little developing brains

Method (super simple):
Add the wet ingredients to the dry, mix until smooth, fold in chocolate chips or blueberries, then spoon into muffin cases.

Bake at 180°C (160°C fan) for 10–12 minutes (or until golden and a skewer comes out clean).

The baby and toddler years are so beautiful… and also so deeply depleting on a mother’s resources.

I tried everything to feel better - but anxiety and exhaustion had set in, and I spent so much of that season trying to act as if I was fine.

I did all the basics:
fresh air, movement, good food, sleep…
But after years of extreme demand - pregnancy, birth, breastfeeding, broken sleep, the constant emotional and physical load of motherhood, those basics weren’t powerful enough to create a real shift.

And then I learned something that changed everything:

There are basics that come before the basics.

The building blocks of what we’re made of… nutrients.

Because the higher the demand on the body, the more fuel we need to keep going, to function, cope, have energy, feel balanced and have a calm steady mind.

I’ve said it many times, but I truly believe Mighty Kids has been guided by a higher power…

The healing that has overflowed from my children, to me, and out into so many families feels almost impossible to explain unless you’ve witnessed it yourself.

I will never stop being in awe of it
